Carrot and Pineapple Cake

Last week was pretty quiet around here as most of the family were on holiday - a break for both those staying home and those going away, I think! The lack of noise and general toing and froing was strange, but rather enjoyable - I'm am a bit of a hermit and so peace and quiet suits me just fine!  In fact, I can almost see myself in 50 years time as a slightly eccentric, crotchety old lady with about 20 cats, a vast collection of knitted tea-cosies and fearsome reputation. Whether it is normal to be thinking about ones gradual senescence at my age is debatable, although the scenario I gave above (minus the tea-cosies) is not one I would wholly recoil from - but I digress.

To welcome them home, I decided to make a cake. I wanted to make carrot cake, but add some pineapple as well. And I wanted bunting. The idea worked - I tweaked the carrot cake recipe in the Hummingbird Bakery cookbook and it came out okay. However, I think I should learn to leave recipes alone and stop changing them! The pineapple didn't really add much in terms of flavour, although the cake was very moist. 

For the 'welcome home' bunting, I used a print-out available here. And I decorated the table with the first spring daffodils - so bright and cheerful!
